Dr. LoRang’s Best Potluck Salad

Chris has become known for his salads—the combination of savory, crunchy, fresh, smooth, spicy, and sweet flavors and textures makes for one unforgettable main course or side dish.

Follow along as he improvises his way through a homemade salad for a community potluck. After all, food is health!

Dr. LoRang’s Best Potluck Salad

Salad Ingredients:

  • Broccoli florets and leaves
  • Kale
  • Green onions
  • Celery
  • Red cabbage
  • Green apple
  • Brussels sprouts
  • Radishes
  • Carrots (from Grade A Gardens)
  • Beets (gold and/or red)
  • Red onion
  • Orange bell pepper
  • Green lettuce
  • Hemp hearts
  • Blueberries
  • Borage flowers (or any other edible flower(s))

Seasoned Nuts:

  • Raw pecans, cashews, sunflower seeds and pumpkin seeds
  • Ghee
  • Olive oil (he used Arbequina Olive Oil*)
  • Rory Brown Breakfast Sausage Blend*
  • Berbere Spice Blend*
  • Ammazza Suocera Blend*

Dressing Ingredients:

  • Fresh garlic
  • Porcini Mushroom Sea Salt*
  • Cancun Rub*
  • Olive oil (Arbequina Olive Oil)*
  • Cucumber Melon White Balsamic Vinegar*
  • Lemon juice
  • Primal Kitchen Avocado Oil Mayo

Directions:

  1. Chop or shred all the salad ingredients except lettuce, blueberries, hemp hearts and flowers. Place in a large bowl.
  2. Roast the seeds and nuts on the stove. Stir frequently to avoid burning. Turn off heat and season with spices.
  3. Chop lettuce and place on bottom of serving dish or bowl.
  4. Make dressing by blending all ingredients together. Pour over vegetables and mix together. Pour this mixture on top of greens.
  5. Pour nuts and seeds on top of salad. Top with blueberries, hemp hearts and borage flowers.
  6. Serve and enjoy!

Tips:

  • As you improvise, go for lots of crunch, diverse colors, and diverse flavors.
  • Remember the fat! Cook nuts in fat like ghee and/or olive oil, then create a dressing with olive oil (and maybe even mayo). This will make your taste buds (and cells!) jump for joy.
  • Try more garlic! Dr. LoRang uses between 2-8 heads of garlic whenever he cooks savory dishes.
  • Try more seasonings (All Spice Culinarium is full of inspiration).
  • Try more acid (like vinegar or lemon juice).
  • Salt to taste.
